Tasty Simple Shiitake Mushroom Omelette Recipe:

Ingredients:

  • 2 large eggs
  • 1/4 cup sliced Shiitake mushrooms
  • 1/4 cup diced onion
  • 1/4 cup diced bell peppers (any color)
  • 1/4 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 tablespoon butter or cooking oil
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Mushrooms: Heat a non-stick skillet over medium heat. Add the butter or cooking oil. Once hot, add the sliced Shiitake mushrooms and sauté for about 3-4 minutes until they become tender and lightly browned. Remove the mushrooms from the skillet and set them aside.
  2. Sauté Vegetables: In the same skillet, add the diced onion and bell peppers. Sauté for about 2-3 minutes until they become slightly soft and translucent.
  3. Beat Eggs: While the vegetables are cooking, crack the eggs into a bowl, add a pinch of salt and pepper, and beat them well until the yolks and whites are fully combined.
  4. Add Eggs to Skillet: Pour the beaten eggs evenly over the sautéed vegetables in the skillet.
  5. Add Mushrooms: Sprinkle the sautéed Shiitake mushrooms evenly over the eggs.
  6. Cook the Omelette: Let the omelette cook for about 2-3 minutes. As it cooks, gently lift the edges with a spatula to allow any uncooked egg to flow underneath.
  7. Add Cheese: Once the omelette is mostly set but still slightly runny on top, sprinkle the shredded cheese evenly over one-half of the omelette.
  8. Fold and Serve: Carefully fold the other half of the omelette over the cheese side, creating a half-moon shape. Cook for another minute or so until the cheese is melted and the omelette is cooked to your desired level of doneness.
  9. Garnish and Serve: Slide the omelette onto a plate, garnish with chopped fresh parsley if desired, and serve hot.
